The Recipe Of New England Clam Chowder

Sanitation Statement: Before beginning this recipe, please wash and sanitize the area you will be working at and your hands; pay particular attention to the fingers and nails on each hand. Sanitation Principles:Temperature Danger Zone: 41 F to 140 F.

Equipment Needed:  Cutting Board, French Knife (8″), steel, sanitizing solution, cleaning rags, liquid quart measure, portion scale in ounces, 8 oz. cup measurement, stock pot (soup), kitchen pot (cook vegetables), large serving spoon, plastic box, and thermometer.

INGREDIENTS:

12-1/2 slices bacon, diced

4-2/3 cups chopped onion

4-2/3 cups water

12-1/2 cups peeled and cubed potatoes

1 tablespoon and 1-3/4 teaspoons salt

ground black pepper to taste

9-1/3 cups half-and-half

1/2 cup and 1 tablespoon and 1 teaspoon butter

6-1/4 (10 ounce) cans minced clams

 

HACCP FLOW

Day 1

Cut all ingredients separately.

Place diced bacon in large stock pot over medium-high heat. Cook at a minimum temperature of 145F until almost crisp.

Add onions, and cook 5 minutes.

Stir in water, potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered for 15 minutes, or until potatoes are fork tender.

Pour in half-and-half, and add butter. Drain clams, reserving clam liquid; stir clams and 1/2 of the clam liquid into the soup. Cook for about 5 minutes at a minimum temperature of 145F. Do not allow to boil.

Cool clam chowder from 135F to 70F within 2 hours, and from 70 F to 41F within an additional 4 hours.

Store the cooled soup in 25 plastic boxes in a walk-in refrigerator/freezer.

Day 2

Reheat the clam chowder to at least 165F.

Serving temperature is 140F or more.
